From the highlands of Tolima, Colombia, Guillam Black Condor is more than just coffee; it is a story of strength and transformation. Established in 2019, the Black Condor Project united farmers across fifteen villages who had been affected by years of violence, offering them support in cultivation, processing, and quality control. The result is a new chapter for Colombian coffee, one defined by hope, community, and excellence.
This washed lot captures everything the project has achieved. In the cup, it reveals candied orange brightness layered with the smooth richness of cacao, balanced by refined sweetness and crisp acidity. Crafted from Caturra and Castillo varietals, the beans are hand‑picked, fermented for twenty‑four to thirty hours, and slow‑dried for twenty days to preserve clarity and complexity. The result is a vibrant yet harmonious coffee with a velvety body that lingers elegantly.
