From the cool highlands of Huehuetenango, Andres Ramirez and his wife nurture their small farm in Concepción Huista with devotion and precision. Surrounded by dense forest and shaded by banana and indigenous trees, their finca benefits from a unique microclimate that allows cherries to mature slowly, developing depth and complexity in every harvest.

This washed lot reveals a smooth, easy‑drinking profile with comforting notes of milk chocolate, pecan, and plum, evolving into dried fruit and a touch of citrus as the cup cools. The slow 32‑hour fermentation adds character and refinement, while careful washing and sun‑drying preserve clarity and balance.
