From the volcanic soils of Finca Himalaya, a farm in family hands since 1880, producer Mauricio has pioneered his signature Pineapple Natural process. Inspired by brewery fermentation, whole Bourbon cherries are shade‑dried for nearly 30 days — far longer than traditional naturals — stirred regularly to ensure even drying and unlock a distinctly tropical profile.
The result is an espresso with real character: candied pineapple brightness, fig sweetness, and almond depth, rounded by caramel and dark chocolate richness. Full‑bodied and defined, it reflects Mauricio’s passion for innovation and his meticulous craftsmanship, while also embodying his commitment to sustainability — from reusing rainwater to crafting cascara from coffee cherry skins, and nurturing biodiversity under shade trees.
