Altitude: 1500-1750 m, tropical savanna climate.
SIPRO is a fruit‑forward Mexican coffee that brings together natural sweetness, structure and depth, shaped by the warm highlands of Chiapas. Grown between 1,500 and 1,750 metres in a tropical savanna climate, this lot benefits from steady development and careful natural processing, resulting in a cup that feels both rich and vibrant.
In the cup, it opens with bright orange‑like acidity, followed by deeper raisin sweetness that adds warmth and complexity. The texture is notably dense and syrupy, giving the coffee a full, satisfying body while maintaining a clean, balanced finish. The natural process enhances fruit intensity and sweetness, creating a profile that is bold, rounded and easy to enjoy.
This coffee comes from SIPRO (Sierra Productora de Café), a small, community‑driven association of producers based in Amatenango de la Frontera, near the border with Guatemala. This unique location, close to the renowned Huehuetenango region, gives the coffee its shared characteristics of bright acidity and layered fruit complexity.
Formed by a group of mostly younger producers, SIPRO was created to provide better access to specialty markets and ensure more value remains within the community. By working collectively, these farmers are able to improve quality, consistency and long‑term sustainability while maintaining strong ties to their local identity.
This is the fourth year this coffee has been selected, and it continues to stand out for its reliability and distinctive flavour. The result is a cup that feels generous, fruit‑driven and full of character — a naturally processed coffee that balances intensity with structure, making it both expressive and easy to return to.
