Wilber Gómez is a vibrant, high‑altitude Colombian coffee from the hills of Saladoblanco in Huila, offering a refined balance of bright citrus character, structured sweetness and a satisfying, weighty body. Grown between 1,750 and 2,100 metres in a cool highland climate, this coffee benefits from slow cherry development, allowing its flavours to build with clarity and intensity.

In the cup, it opens with lively passionfruit brightness and crisp pomelo‑like acidity, giving it a fresh, citrus‑driven character. This is supported by a more dense, rounded texture that adds depth and structure, making the experience both vibrant and grounded. The result is a cup that feels expressive yet composed, with a clean finish and a natural sense of balance.

At the heart of this coffee is the Pacamara variety, known for its bold flavour and complexity. Expect subtle floral aromatics alongside its distinctive citrus profile, all working together to create a layered, memorable cup.

This lot is processed using a semi‑washed (honey) method, where part of the fruit mucilage is left on the bean during fermentation. A controlled 48‑hour fermentation stage enhances sweetness and softens the acidity slightly, resulting in a smoother, more structured mouthfeel while allowing the coffee’s natural brightness to remain clear.
